Pineapple Horsey Sauce
Stir 1 tsp. creamy horseradish into 1 cup Brimstone Originals® Pineapple Pepper Jelly. Mix well. Warm in microwave 20 – 30 seconds and serve as a sauce over baked fish, as a topping on crab cakes, and as a dip for coconut shrimp.
Pineapple Pepper and White Wine Glazed Shrimp and Scallops
In large saute' pan, melt ½ cup butter. Add 4 cloves minced garlic and saute' for 1 minute. Add 1 to 2 lbs. of shrimp and scallops. Saute' for 3 minutes, making sure each shrimp and scallop is fully coated. Add 1/4 cup white wine and stir well. Blend in ½ cup Brimstone Originals® Pineapple Pepper Jelly until melted. Mix well. Serve over Basmati rice.
Pineapple Rice Dinner
Steam 1-2 cups Basmati rice. Saute' chunks of chicken or pork with butter and minced garlic. Add a medley of fresh vegetables. Mix ½ cup Brimstone Originals® Pineapple Pepper Jelly with 1 tsp. powdered ginger and 1 Tbsp. soy sauce. Mix well and serve over steamed rice.
Pineapple Panko Fish
Set oven to 375 degrees. In a shallow dish, mix 2 Tbsp. Brimstone Originals® Pineapple Pepper Jelly with 1/2 cup mayonnaise. In another shallow dish, mix 1 cup Panko and 1 - 2 tsps. Savory Spice Shop's Hidden Cove Lemon Garlic Blend. Coat both sides of a one-pound piece of mild fish in the jelly/mayo mix and then both sides in the Panko mixture. Melt 2 Tbsp. butter in a baking dish in pre-heated oven. Place coated fish in baking dish and bake for 20 minutes.
Warm Brimstone Originals® Cranberry Jalapeño Pepper Jelly or Brimstone Originals® Pineapple Pepper Jelly and drizzle over cheesecake.
